Chicken loaf isn't exactly a meatloaf because it's made with cooked chopped chicken. The loaf can be served hot out of the oven or later on, cold, as an appetizer. This simple meat loaf can be prepared the night before and is great served with a side salad or sliced and served in a sandwich.

  2. Make ready 3 lb chicken thighs, boneless skinless

  17. Take 2 wax paper/ butter paper
  18. Make ready 1 nonstick spray

Instructions to make Chicken loaf:
  1. Preheat oven 350° Fahrenheit
  2. Boil the chicken in water, onion quartered, garlic pepper, and paprika. Boil till chicken is done.
  3. Take cooked chicken and cut into small pieces.
  4. Take a food processor or blender and add chicken, onion, and garlic. Blend till its a paste adding oil into blender till smooth.
  5. Mix everything but the cheddar cheese, and red pepper flakes.
  6. Spray wax paper. Spread out half the chicken mixture on wax paper. Add pepper flakes, and cheddar cheese. Do this twice
  7. Take and roll up the first loaf twist the ends. Then the second.
  8. Put on baking sheet bake 30 minutes.
  9. Be careful opening wax/butter paper. Serve hope you enjoy. Optional add barbecue sauce to top before serving.
