  11. Take 1/2 C soy sauce
  12. Get 1/4 C sesame oil
  13. Take 1/3 C rice vinegar
  14. Make ready 2/3 C coconut oil
  15. Get as needed vegetable oil
  16. Take as needed kosher salt & white pepper

Toss chicken with dressing in resealable plastic bag. Stir in broth; bring to boil. Chicken breasts with a crunchy breadcrumb-and-almond-sliver coating are a light and satisfying springtime entree. Serve them with Orzo with Peas and Mint and Romaine Salad with Prosciutto Crisps.

Instructions to make Almond Chicken:
  1. Combine rice and 3 C chicken stock together with a small pinch of salt in a small saucepot. Bring to a simmer. Cover. Cook 15 minutes. Remove pot from heat and let steam 5 minutes. Do not remove lid prior.
  2. Heat enough oil to cover the bottom of a large saute pan or wok. Season chicken with salt & white pepper. Sear in batches and remove chicken from pan.
  3. Add peppers and onions. Saute on high heat until nearly tender.
  4. Add chicken, almonds, garlic, and ginger. Saute 1 minute.
  5. Whisk soy sauce, sesame oil, coconut oil, rice vinegar, and remaining chicken stock together. Add to pan. Cook 1 minute.
  6. Whisk cornstarch and cold water until smooth. Add to pan while stirring.
  7. Add scallions and toss. Reserve a few scallions for garnish. Serve over rice.
  8. Garnish with toasted sesame seeds and scallions.
