  1. Prepare 1 kg chicken cut into pieces
  2. Get 4 tbsp oil
  3. Get 2 cups sliced onions
  4. Make ready 3 tbsp ginger garlic paste
  5. Get 5-6 green chillies paste
  6. Take 1/2 tsp haldi powder
  7. Get 1 tbsp jeera powder
  8. Get 1 tbsp dhania powder
  9. Make ready 1 tbsp red chilli powder
  10. Make ready 2 tbsp biryani masala
  11. Take 3 tomatoes cut in semicircles
  12. Prepare 1/2 cup chopped coriander leaves
  13. Take 1/2 cup chopped mint leaves
  14. Prepare 1/2 cup curd
  15. Get 1 tbsp lemon juice
  16. Get 2 tbsp coconut milk
  17. Prepare 2 cup fried onions
  18. Make ready 1 handful fried cashewnuts and raisins
  19. Prepare Salt as per taste
  20. Make ready 750 gms basmati rice
  21. Take 4 tbsp oil or ghee
  22. Prepare 1 small stick dalchini
  23. Prepare 5 Cloves
  24. Get 5 green cardamoms
  25. Take 1 star anise (badiyan)
  26. Take 1 tsp fennel seeds
  27. Make ready 2 tsp saffron colour
  28. Get To taste Salt
  29. Prepare As needed Water
Steps to make Malbar Chicken Biryani:
  1. Wash the chicken and drain. Heat oil in vessel add sliced onions fry till translucent add ginger garlic paste, green chilli paste. Saute till raw smell goes.
  2. Add the chicken pieces,saute for a min add haldi powder, dhania powder, jeera powder, red chilli powder, biryani masala and saute for some time then add the tomatoes and salt cook till tomatoes are mashed and mixed with the masala
  3. Add curds cook till it leaves the sides, add lemon juice, some coriander and mint leaves cook till the chicken is tender then add the coconut milk mix and off the flame
  4. Rice :- Soak the rice for half an hour. Heat oil in a vessel add dalchini,laung, cardamoms, staranise, fennel seeds saute for a min add rice stir it then add water 1 inch above the rice, add salt and cover and cook till rice is done. Fluff up the rice with a fork
  5. Assembling:- Grease a heavy bottom pan add the chicken masala then add some fried onions, chopped coriander and mint leaves, cashewnuts & raisins. Then add the cooked rice on top of the chicken masala
  6. Sprinkle saffron colour, fried onions, chopped coriander and mint leaves and cashewnuts. Cover it with a lid and keep it on a tawa for dum on medium flame for 15 to 20 mins or till steam comes out. While serving garnish with fried onions
