The ingredients needed to make Mughlai Chicken Biryani:
- Make ready For ground masala paste-
- Get 2 Garlic pods
- Get 2 large Ginger pieces(25 gms)
- Make ready 5 Green chillies
- Take 2 Medium sized Tomatoes
- Prepare For marination:
- Take 1 kg Chicken
- Take 2 cup Fried Onion
- Make ready 1/2 tsp Turmeric powder
- Make ready 1 cup Curd
- Take 3/4 tsp Salt
- Get For Chicken masala-
- Make ready 2 tsp Kashmiri chilli powder
- Take 2 tbsp Oil
- Prepare 1 cup Water
- Get as per taste Salt
- Make ready 3 tbsp Biryani masala
- Prepare For Rice-
- Take 2 cups Basmati Rice
- Prepare 2 Black Cardamoms
- Prepare 4 Green Cardamoms
- Make ready 1 inch Cinnamon stick
- Get 2 Bay leaves
- Make ready 4 cloves
- Prepare 2 tbsp Ghee
- Get as per taste Salt
- Prepare 31/2 cups Water
- Get For Garnishing-
- Take 2 tbsp Ghee
- Get 1/2 tsp Saffron
- Prepare 2 tbsp Warm Milk
- Make ready 1/2 cup Fried onion
- Prepare 2 tbsp Finely chopped Coriander leaves
- Take 6 Fried Cashews
- Take 8 Fried Raisins
Instructions to make Mughlai Chicken Biryani:
- Clean and wash chicken pieces.
- Blend together all the ingredients for ground masala and make a fine paste.
- Add this paste in chicken pieces.
- Add all the ingredients mentioned For marination and mix well.
- Set aside for at-least 1 hour.
- Heat 2 tbsp oil in a pan.
- Add the marinated chicken.
- Add Kashmiri chilli powder, biryani masala, water and mix well.
- Cook on medium heat until the chicken is cooked well and the gravy becomes thick.
- Add salt if needed and set aside.
- Wash and soak the rice for 20 minutes.
- Drain the water completely and set aside.
- Soak saffron in warm milk and set aside.
- In a big pan or cooker heat ghee.
- Add whole spices mentioned for rice.
- Add soaked and washed rice and fry for a minute.
- Add water and salt.
- Close the lid and cook till 3/4 done or in cooker cook for 1 whistle.
- Let it cool completely.
- In a biryani pot, add 2 tbsp of ghee and spread the ghee evenly to the bottom of the pot.
- Then put the prepared half of chicken masala, and spread it evenly.
- Then layer half of the rice over the chicken masala.
- Sprinkle ¼ cup fried onion and chopped coriander leaves.
- Then layer rest of chicken masala.
- Again layer the rest of the rice on top of it.
- Sprinkle remaining fried onion, chopped coriander leaves and half of fried Cashews and raisins.
- Finally, pour 1 tbsp of melted ghee and the saffron milk on top.
- Close the biriyani pot with a tight fitting lid.
- Put the biryani pot on the stove, and cook for about 15 minutes over low flame.
- Remove from heat, mix the rice and chicken from the bottom of the pan using a long spoon.
- Serve hot with Raita or salad.
