Instructions to make Chicken Masala Curry:
- Wash and pat dry the chicken.
- Marinade the chicken with yogurt, cumin Coriander powder, salt, kasmiri red chilli powder, ginger garlic paste and oil for 15 minutes. More is better.
- Heat mustard oil in a kadai and add the whole spices.
- When they starts to crackle add the onions.
- Saute until golden brown.
- Now add the marinated chicken and keep stirring for 15 minutes.
- Add tomato paste and keep cooking until the raw smell of tomato completely disappears.
- At this stage add garam masala and continue cooking until oil separates.
- Add ghee and cover and cook for another 5 to 10 minutes until fully done.
- Decorate with some Coriander leaves and serve hot with steamed rice/roti/parantha etc.
